Chocolate Banana Split Pudding
1/2 cup sugar
1/4 cup unsweetened cocoa powder
3 Tbsp. cornstarch
1/8 tsp. salt
2-1/2 cups skim milk
1-1/2 tsp. vanilla
2 small bananas, sliced
4 fresh strawberries
Strawberries (optional)
In a heavy medium saucepan combine sugar, cocoa powder, cornstarch, and salt. Stir in milk. Cook and stir over medium heat until thickened and bubbly. Cook and stir 2 minutes more. Remove from heat. Stir in vanilla. Pour pudding into a bowl. Cover surface with plastic wrap. Chill the mixture thoroughly without stirring.
To serve, divide half of the pudding among four dessert dishes. Top with banana slices; spoon on remaining pudding. Garnish each serving with a fresh strawberry and add extra strawberries to the serving plate, if desired.
