Low Fat Chocolate Banana Bread
2 cups all-purpose flour
2 teaspoons baking powder
1/4 teaspoon salt
2 cups mashed ripe bananas
1 egg
2 egg whites
1/4 cup canola oil
1/3 cup skim milk
1 teaspoon vanilla extract
1 cup sugar
3 ounces chopped semisweet chocolate (about 2/3 cup)
Preheat oven to 350 degrees. Spray a 9-by-5-inch loaf pan or 12 muffin cups with non-stick cooking spray, then sprinkle on flour and knock off excess.
Combine the flour, baking powder and salt; set aside.
In a large bowl, combine the bananas, egg and egg whites, oil, milk, vanilla and sugar. Add the flour mixture and the chocolate. Combine just until moistened. Pour into the prepared loaf pan, or fill muffin tins 3/4 full. Bake until a sharp knife inserted in the center of the loaf or muffin comes out clean, about 50 minutes for a loaf or 25 minutes for muffins.
