Black Forest Pancakes
Pancakes:
1 cup all purpose flour
1 1/2 tsp. baking powder
1/2 tsp. baking soda
2 Tbsp. unsweetened cocoa
3 Tbsp. sugar
1/4 tsp. salt
1 cup chocolate milk (1% or skim)
1/4 cup egg substitute
1 1/2 Tbsp. margarine, melted
nonstick cooking spray
Cherry Sauce:
2 Tbsp. sugar
2 tsp. cornstarch
1/4 cup water
1/4 tsp. lemon juice
8 oz. frozen unsweetened cherries, thawed
Combine flour, baking powder, baking soda, cocoa, sugra and salt in a large bowl; make well in center. Combine chocolate milk, egg substitute and margarine; add to dry ingredients, stirring just until combined and all dry ingredients are moistened. For each pancake, pour 2 tablespoons of batter onto a hot griddle which has been sprayed with nonstick spray. Flip pancakes when tops are bubbly and edges are dry.
To make Cherry Sauce, combine sugar, cornstarch and water in a saucepan. Stir until smooth and add lemon juice and cherries. Cook over medium heat until thickened and bubbly, stirring constantly.
Serve pancakes with cherry sauce.
