Rocky Road Brownies

1/4 cup canola oil
3/4 cup white sugar
1/2 cup packed light brown sugar
1 large egg
1/2 cup unsweetened applesauce
1/2 tsp vanilla extract
1/3 cup cocoa powder
1 cup all purpose flour
1/4 tsp salt
1/4 tsp baking powder
1/2 cup semisweet chocolate chips
1 cup mini marshmallows
3 Tbsp chopped peanuts 

Preheat oven to 375*. Lightly spray an 8×8 square baking pan with cooking spray and set aside.

In a medium mixing bowl, whisk together the oil, white sugar, brown sugar, egg, applesauce, and vanilla until blended.  Whisk in the cocoa powder until blended.  Stir in flour, salt, and baking powder.  Scrape into the prepared pan.

Bake for 20 minutes. Remove from oven and sprinkle with the chocolate chips, marshmallows, and nuts. Return to oven and bake until marshallows are lightly golden and a small knife inserted into center comes out clean (about 5 minutes longer).  Cool in pan on wire wrack.  Cut into 12 squares.

Serves 12.
