Cocoa Bourbon Balls

3 cups vanilla wafer crumbs
1 cup confectioner’s sugar
1/2 cup pecans, dry-roasted
3 tablespoons corn syrup
1 1/2 tablespoons cocoa
6 tablespoons bourbon
1/4 cup confectioner’s sugar
1 Tbsp. cocoa

In a large bowl, combine all ingredients except the last two. Combine the 1/4 cup confectioner’s sugar and the 1 tablespoon cocoa in a small bowl and set aside.

Form mixture into 48 small balls. If mixture becomes crumbly, add a few drops of bourbon to moisten. Roll balls in the reserved cocoa-sugar mixture. Store in an airtight container for about a week.
